Chili Cook-Off

As I told you earlier this week, this past week was full of fundraisers and I helped make cupcakes for the cupcakery  (see that post for my cherry chocolate cupcake recipe) and chili for the chili cook-off!






There were 10 contenders in the cook-off. 

Here's mine! The photo from my phone is blurry, but you get the idea...




Mine wasn't the cook-off winner, but it was sure tasty! It was also lean and had some great ingredients. I love it! The recipe is from Sara B at Sara B Consulting.




Ingredients:
1 can black beans
1 can garbanzo beans
1 can chili beans
1 can corn
(Rinse all of the above)
1 can diced tomatoes Italian flavor
1 can Rotell’s
1 jug vegetable juice (pour in a little as you go to get the consistency you like - I used the whole jug)
1 lb browned ground turkey breast
1 lb browned lean ground beef
1 green pepper (saute with meat)
1/2 onion (saute with meat)
Chili powder, garlic powder, and cumin to your taste
 
Directions:
Pour all into big pot, bring to boil, and then simmer for half the day. Enjoy!


There are SO many variations of chili, what are your favorite ingredients or sides with your chili?

My favorite side recently is the beer bread I made so often last fall! Ohmygosh, it's so good! I need to make it soon with another batch of chili.

A Thrifty Afternoon in Fort Worth

I had yet another successful trip to Double Exposure (see a previous trip here) this afternoon! It's my favorite upscale thrift shop - at this point, it's up there as my favorite clothing store!

Every single time I've been there, I come away with at least a handful of quality brand name items that are great for work or the weekends. I just love the price and quality they carry. It is one of the places I will miss MOST about the DFW area.

Is it weird to say that shopping at a thrift store has made me more stylish? I've made other trips there I didn't post about and most of my favorite items in my closet were less than $10 from Double Exposure. I have also had success at Platos's Closet a few times! If you've never tried a thrift store, you definitely should. It feels great to save that much money!

Now back to watching ISU play an AWESOME game against Texas Tech! It's great to see Nebraska win and ISU winning today! And yes, I'm still scarred over game 6 of the World Series... time will heal ;) and seeing the Cubs win the series next year would heal up the wounds (*winkwinkCubs*)!

Cherry-Chocolate Cupcakes & the Cupcakery

We had a "cupcakery" as a fundraiser today - the same annual fundraiser I baked for the bake sale I posted about last year. The cupcakes (mostly homemade) were awesome! We have so many talented bakers, I just had to share some photos I took:





Zombie cupcakes! Aren't these adorable? They're red velvet with cream cheese frosting in the middle, and buttercream frosting on top.




Chocolate "mice" (made of chocolate covered cherries, almond slices and a big chocolate chip) on top of German chocolate cupcakes. These were a big hit, everyone loved the mice!




I made the cherry ones in the middle! Recipe below. They were a hit and sold out pretty fast! One compliment I received was that they look like Martha Stewart cupcakes :) It made my day!




Mexican Chocolate -- Coconut butter pecan -- Lemon with cream cheese frosting

I can't get this photo to flip, but this is the assortment I purchased (yes one of my own since my dad didn't get to try mine :)). I am so excited to try them! Just not all in one sitting hopefully ;)


 Here's the recipe for the cherry chocolate cupcakes I made! They were one of the easiest cupcakes I've made since they use a box of cake mix! You should definitely try them...


 Cherry-Chocolate Cupcakes 
with Dark Chocolate Frosting


 


Cupcake Ingredients:
 1 (18 oz) box devil's food chocolate cake mix
3 large eggs
1/3 cup canola oil
1 tsp almond extract
1 (6 oz) bottle maraschino cherries, drained and chopped
1 cup white chocolate chips

Frosting Ingredients:
1 1/4 cups (2 1/2 sticks) unsalted butter, softened
8 (1 oz) squares semi-sweet chocolate, melted
1 tsp almond extract
1 (16 oz) box powdered sugar
2 tbsp cocoa
Extra liquid from maraschino cherry bottle (optional)
1 bottle maraschino cherries with stems to top cupcakes (optional)





Cupcake Directions: 

Preheat oven to 350 degrees

Place paper baking cups in 24 muffin cups. Combine cake mix, eggs, oil and almond extract and 1 1/4 cup water in bowl and beat on low speed for 30 seconds. Increase speed to medium and beat mixture for 2 minutes. 

Stir in cherries and white chocolate chips and mix well but gently.

Pour into muffin cups and bake for 19 - 23 minutes or until toothpick inserted in center comes out clean. Cook on wire rack 5 - 10 minutes and cool completely before frosting.





Frosting Directions:
Beat butter in bowl on medium speed until smooth. Stir in melted chocolate, almond extract, and a pinch of salt.

In a separate bowl (or I used a large measuring glass since I was using it anyway), combine powdered sugar and cocoa. Gradually add sugar and cocoa mixture and beat until light and fluffy. Add cherry juice 1 tbsp at a time until you like the consistency and until you like the amount of cherry flavor.  Frosting for 24 cupcakes.




So there you go! Not too bad, eh? And they are so cute and photogenic.



 They taste really good as well.



 

I love this carrying/storing case! I borrowed it from a co-worker since mine is already in Minnesota and it was great! It has a lid that covers it by the way.

It was in the mid-eighties today which was lovely




But tomorrow is supposed to only reach the mid-fifties! Ahh! It hasn't been that "cold" here since the spring, so I had to enjoy the sunshine today while I have it.






 See? Just too cute. 


I do have to say that one of my sweet co-workers made these cupcakes for my adoption day/Nick and I's anniversary since I had been talking about how excited I was for that day. So she nonchalantly had me pick my fav cupcakes out of a cupcake book and surprised me and brought these! They were SO good so I knew I had to make them for this cupcake sale :) The sale today ended up making over $530 by the way! All proceeds go to the United Way of Tarrant County.

Texas State Fair & Tons of Fried Food...

We had a great time at the Texas State Fair yesterday! It was a beautiful 86 degree day and a good time was had by all! 


Let's start with the food... the crazy fried fair food...


Fried bublegum, anyone?? It was this year's most creative award winner. I heard it's a fried bubblegum flavored marshmallow. No thanks...



We all shared fried catfish (mom and dad had their hearts set on this)- it was surprisingly tasty!



How about some fried beer?  This was the big hit last year although I heard people say it wasn't very good...





Fried Grilled Cheese? I do love grilled cheese, but I'm not so sure about frying it..

If that doesn't do it for ya, how about some chicken livers?!







These dancers were great! They had fun chiming bells too. We watched dancers from different nationalities.



Then they danced balancing these huge swords on their heads!

The Cotton Bowl is in the middle of the fair, it's where the Oklahoma/Texas game is every year during the fair!


We got to see the biggest boar at the fair, weighing in over 1,100 pounds, Boris!

We also got to watch a free bird show and it was a lot of fun. To the right of the stage, you can see Downtown Dallas!






My favorite part was when they had us all look back at the Texas Star and had us watch the gold cart - as it got to the top, it opened up and one of the birds in the show flew down and on to the stage. It was so cool!



It was such a pretty day and the clouds were awesome!

It was a great day! And it was fun to compare it to the Iowa State Fair with my parents!
